Think dinner on a chip. "Leftover cooked vegetables" is not in the ingredients list as I'm not officially recommending that you sneak them in. That's because I'm a friend to children. Even if I happen to know for a fact that kids will never, ever notice that finely chopped broccoli has been stirred into the black beans. You didn't hear it from me.
Recipe
Serves 4 to 6
1(8-ounce) bag plain tortilla chips
2 cups shredded cooked turkey
1 (15-ounce) can black beans, rinsed and drained
1/2 pound Monterey Jack cheese, coarsely grated
Sour cream
Salsa
Preheat the broiler, then let your child layer the ingredients in a large baking or roasting pan: first chips, then turkey, then beans, then cheese. Broil until the cheese is bubbling and the chips are starting to brown in places, 3 to 5 minutes. Serve with sour cream and salsa on the side.
