No-Bake Pumpkin Tartlets
Makes 9 tartlets
1 (3.4-ounce) package vanilla instant-pudding mix
1 1/2 cups milk
1 (15-ounce) can pumpkin
1 teaspoon ground cinnamon
9 (3 1/2-inch) individual graham-cracker-crumb tart shells
Whipped cream for topping
In a large bowl whisk together the pudding mix and themilk until smooth and thick. Add the pumpkin and cinnamon and whisk until smooth. Spoon the filling into the tart shells and refrigerate for 4 hours. Top with whipped cream and serve.

Pumpkin is high in potassium, which is good for healthy heart function. Some doctors think that a potassium-rich diet for kids will help keep their blood pressure in check as they age.
