This 1950s version of a classic holds up magnificently, as far as I'm concerned. I wouldn't serve it at a dinner party, but my secret love for it causes me to make it at least once a year.
Recipe
Serves 4
1 cup mandarin oranges in light syrup, drained
1 cup sour cream
1 cup shredded sweetened coconut (unsweetened would also work, if you can find it)
1 cup canned crushed pineapple in juice, drained
1 cup miniature marshmallows
tablespoon lemon juice
Fold everything together in a large bowl gently but thoroughly. Chill for at least 2 hours before taking the bowl away someplace where you can enjoy it in private.
